Ingredient	Amount	Prep
Yellow onion	1 pieces	peeled and chopped
Ginger root	1 pieces	peeled and chopped
Sunflower oil	2 tablespoon
Beetroot	3 pieces	washed, peeled, cooked, chopped into cubes
Orange juice	150 mL
Vegetable broth	150 mL
Crème fraîche	150 mL

Heat Sunflower oil in a pot and fry the Yellow onion until it is glazed. Add Beetroot , Orange juice and Vegetable broth . Cook for 20 minutes. Add Ginger root and Crème fraîche . Add salt and pepper as per your liking. If soup is too thick, add water.

Tips

Ideally, serve with flatbread.
